The Chef

Meet Chef Paco
Cortes

Chef Paco Cortes grew up in Mexico City, cooking the food his family taught him, the way it was meant to be made. He came to Las Vegas and did something most people don't: he refused to water it down. For years he quietly built a reputation as one of the most authentic Mexican chefs in the valley, earning recognition in the Las Vegas Review-Journal and a loyal following that spread entirely by word of mouth.

Alebrijes, the wildly colorful, fantastical creatures of Mexican folk art, are bold, fearless, and impossible to ignore. That is exactly the spirit Chef Paco brings to every dish. Inside Neonopolis in the heart of Downtown Las Vegas, this is the restaurant locals keep to themselves and visitors wish they had found on day one.

Frequently Asked

Before You Visit

Where exactly are you inside Neonopolis?
We're on the upper level of Neonopolis at 450 Fremont Street, Suite 310. Enter through the main doors on Fremont Street, take the escalator or elevator up, and we're straight ahead, across from the Fremont Street Experience canopy.
Where do I park near Alebrijes?
The Neonopolis parking garage is the easiest option, with self-parking available. For street parking, the area off Las Vegas Boulevard and Ogden is the closest to the building. Ride-share drop-off is right at the main entrance on Las Vegas Boulevard and Fremont.
Do you take reservations, or are walk-ins okay?
Both. You can reserve through Shift4 or OpenTable using the buttons in our Visit section, or walk in any time. Reservations are recommended on weekends, holidays, and event nights downtown.
What are your hours?
We're open every day from 11 AM until Midnight, including weekends and holidays. The full menu is available throughout, and the bar stays open until close.
What makes Alebrijes different from other Mexican restaurants in Las Vegas?
Chef Paco Cortes grew up in Mexico City cooking the food his family taught him, and he refuses to water it down. The menu features traditional dishes you rarely find locally: duck carnitas, mole poblano, short rib in salsa de chicatanas, cochinita pibil, and chapulines.
Do you have vegetarian options?
Yes. Chile Relleno, guacamole, roasted Mexican corn, cheese quesadillas, cheese enchiladas, and bean burritos are all vegetarian. Let your server know if you'd like anything modified or made without dairy.
Is Alebrijes family-friendly?
Yes. Families are welcome at any time, day or night. Most dishes can be made mild on request, and kids tend to gravitate toward the cheese quesadillas, chicken taquitos, and churros for dessert.
Do you host private events, birthdays, or large parties?
Yes. We host birthdays, corporate dinners, rehearsal dinners, and group celebrations. Submit a request through Tripleseat using the button in our Visit section, or call (702) 971-5522 to plan directly with our team.
